They really did fall off in the 80s.
Tattoo You was alright but most stuff after that really just not good. They still put on a helluva concert in 2002 though.
And their run through the 70s is some of the best music ever recorded. Sticky Fingers being my personal favorite but love Let it Bleed, Exile and Beggars just as much and also a big fan of Goats Head Soup, Aftermath and Some Girls.
One good 80s/90s comp is the London Years. Some really good rare stuff on there, including Memo From Turner which is just plain amazing (as is everything they did with Ry Cooder).
